So I just redid my levels to base it around the dark moon greatsword because I heard it was still good. I also used my only ancient somber smithing stone on it so yeah I hope it is good. I think Giant-Crusher isn't topped, though of course if you don't want to use a colossal weapon, then that opens up a lot of possibilities. Nightrider Glaive seems to be a favorite, and for good reason: it's quite strong, halberds are just really good, its moveset is good, and infused heavy it gets S (184) scaling with 270 base. This is very good.They scale a bit differently... So, for the Darkmoon GS I would keep leveling INT to ca. 55-60, followed by whatever DEX you can spare. The reason is that DMGS scales best with INT, and then equally with STR and DEX. But, DEX improves your casting speed, benefiting any spells you are using (which you should, given the massive invest in INT).
Good candidate weapons for this would be Astora GS, Lothric Knight GS, Zweihander, etc. Infuse with whatever gets you the most physical AR, buff, and melt through your enemies. If you want to be a caster, you should meet the minimum requirements for your sidearm (like the Longsword or the Dragonslayer Axe and infuse with lightning or blessed ...
I'd recommend a good amount of vit to complement the sword. In pvp, I feel it can get pretty predictable since its windup animation is really easy to see. You might get good results if you learn to free aim the projectile to catch rolls or something, but I feel other weapons and projectiles do that a lot better.
