Mcb 402 is very easy and pretty fun imo. 317 like you said was pretty solid, I also just took MCB 300 this semester and didn't find it particularly fun or interesting, but it was pretty easy since exams were open note. ACE 251 was interesting and easy. It's Econ 102 but about food and you get to choose western or non-western credit. AAS 100 I believe. Ling 111 was an awesome classes taught by grad students. It's an intro linguistics class called language in global context and I had a lot of fun.

You get to do something that could be classified as semi-useful to most people.
